In a large bowl, mash the bananas. Add applesauce, almond milk, vanilla, and cinnamon. Stir in oats, raisins or nuts (if using), and chocolate chunks until everything is well combined.
Scoop the Dough:
Drop spoonfuls of the dough onto the prepared baking sheet. Flatten slightly into cookie shapes.
Bake:
Bake for 15–20 minutes, or until cookies are lightly golden and set.
Cool:
Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
