Ground Beef & Roasted Veggies Skillet

Cook the Beef: Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
Sauté the Veggies: Add the minced garlic, sliced onions, and chopped bell peppers to the skillet. Stir for 3-4 minutes until softened.
Add Zucchini & Season: Toss in the zucchini slices and season with salt, pepper, paprika, and oregano. Cook for 4-5 minutes, or until the veggies are tender but still crisp.
Garnish & Serve: Sprinkle with fresh parsley and serve hot.
