Ground Beef and Potato Casserole with Mozzarella

Preheat the oven to 375°F (190°C).

Lightly grease a baking dish with olive oil and arrange the sliced potatoes in a single layer at the bottom. Drizzle a little olive oil over the potatoes, season with salt and pepper, and set aside.

Cook the Ground Beef:

Heat a little olive oil in a skillet over medium heat. Add the chopped onion and green bell pepper, cooking until softened.

Add the ground beef to the skillet, breaking it apart with a spoon as it cooks. Cook until browned and fully cooked, about 5-7 minutes.

Season with salt, black pepper, sweet paprika, and thyme. Stir in the tomato sauce and cook for an additional 2-3 minutes until everything is well combined.

Assemble the Casserole:

Spread the cooked ground beef mixture evenly over the layer of potatoes in the baking dish.

Sprinkle shredded mozzarella cheese evenly over the top.

Bake the Casserole:

Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for another 10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve:

Remove the casserole from the oven and let it cool for a few minutes before serving. Garnish with chopped chives for a pop of color and extra flavor.
