Grilled Chicken Skewer Bowl with Avocado Cucumber Salad


Toss chicken cubes with olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper. Let marinate for 15 minutes.

Grill the Skewers:
Thread the marinated chicken onto skewers. Cook on a grill pan or stovetop over medium heat for 8-10 minutes, flipping occasionally, until fully cooked and slightly charred.

Prepare the Cilantro Rice:
Mix warm cooked rice with cilantro, salt, and lime juice for extra freshness.

Make the Avocado Cucumber Salad:
Combine avocado, cucumber, red onion, and feta cheese in a bowl. Drizzle with olive oil and lemon juice, then season with salt and black pepper.

Assemble & Serve:
Place cilantro rice on a plate. Add grilled chicken skewer on top. Serve with a generous portion of avocado cucumber salad.
