Grilled Chicken and Veggie Platter with Crispy Fries

In a bowl, mix olive oil, paprika, garlic powder, oregano, salt, and pepper. Coat the chicken pieces thoroughly and let them marinate for at least 30 minutes to infuse the flavors.

Grill the Chicken:

Preheat your grill or grill pan to medium-high heat. Grill the chicken for 20-25 minutes, turning occasionally, until it’s fully cooked through and the internal temperature reaches 165°F (74°C). The chicken should be tender and juicy on the inside with a crispy, charred exterior.

Cook the Fries:

Preheat your oven to 425°F (220°C). Toss the potato wedges with a little oil, salt, and pepper. Spread them evenly on a baking sheet and bake for 20-25 minutes, or until they’re golden and crispy.

Prepare the Veggies:

Steam or boil the corn kernels for 5 minutes until tender. Arrange the cucumber slices, chopped lettuce, and green olives either in small bowls or directly on the platter.

Assemble and Serve:

On a large platter, place the grilled chicken in the center. Surround it with the crispy fries, steamed corn, and fresh veggies. Garnish with freshly chopped parsley for a touch of color and flavor.
