Boil 1 cup of water and steep the green tea bags for about 5 minutes.
Remove the tea bags and let the tea cool slightly.
2. Prepare the Mixture
In a small saucepan over medium heat, combine the grated ginger, honey, lemon juice, and the green tea.
Bring to a gentle simmer while stirring occasionally.
3. Add Agar-Agar
Gradually sprinkle in the agar-agar powder (or gelatin), stirring constantly to dissolve evenly.
If using sugar for extra sweetness, add it at this stage.
Let the mixture simmer for another 3-5 minutes until it thickens slightly.
4. Set the Chews
Pour the mixture into silicone molds or a parchment-lined small dish.
Allow it to cool at room temperature before refrigerating for at least 2 hours or until firm.
5. Cut and Serve
Once set, remove from molds or slice into small bite-sized pieces.
