Whisk the Eggs and Sugar:
In a large bowl, whisk the eggs and sugar together until the mixture becomes light and fluffy.
Add Greek Yogurt and Lemon Zest:
Stir in the Greek yogurt and lemon zest. Mix until smooth and well combined.
Sift Dry Ingredients:
In a separate bowl, sift the cornstarch and pinch of salt together. Gradually add this mixture to the wet ingredients, gently folding it in to maintain the fluffiness of the batter.
Bake the Cake:
Pour the batter into the prepared cake pan. Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve:
Allow the cake to cool completely before removing it from the pan. Serve as is, or dust with powdered sugar for an extra touch.
