Greek Feta Roast Potatoes

1. Prep the Oven and Potatoes
Preheat your oven to 400°F (200°C).

In a large bowl, toss the halved baby potatoes with olive oil, lemon juice, oregano, minced garlic, salt, and pepper.

2. Roast the Potatoes
Spread the potatoes evenly on a baking sheet in a single layer.

Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.

3. Finish with Feta and Herbs
Remove the potatoes from the oven and immediately sprinkle with crumbled feta cheese, fresh parsley, and Kalamata olives (if using).

4. Serve and Enjoy
Serve hot as a side dish or on its own with a dipping sauce.
