In a ziplock bag, combine the garlic, vinegar, lemon juice, olive oil, Greek yogurt, oregano, salt, and black pepper.
Add the chicken thighs and massage the bag to coat the chicken thoroughly with the marinade. Marinate for at least 2 hours, preferably 3 hours, or up to 12-24 hours.
Make the Tzatziki:
Cut the cucumbers in half lengthwise and scrape out the watery seeds. Grate the cucumber using a box grater.
Wrap the grated cucumber in a tea towel or paper towels and squeeze out any excess liquid.
In a bowl, combine the cucumber with the yogurt, lemon juice, olive oil, garlic, salt, and black pepper. Mix well and set aside for at least 20 minutes for the flavors to meld.
Prepare the Salad:
In a bowl, combine the tomatoes, cucumbers, red onion, and fresh parsley (if using). Season with salt and pepper to taste.
