Remove the chicken from the marinade and cook for 2-3 minutes on each side until golden brown and fully cooked through. The cooking time depends on the size of the chicken pieces.
Once cooked, remove the chicken from the heat and cover it loosely with foil. Let it rest for 5 minutes.
Assemble the Gyros:
Warm the pita or flatbreads and layer each one with a generous portion of salad, sliced chicken, and a dollop of tzatziki. Roll up and serve immediately.
