Grated Veggie Patties (Zucchini, Potato, and Carrot)


Grate the zucchini, potatoes, onion, and carrots using a coarse grater. After grating the zucchini and potatoes, squeeze out any excess moisture using a clean kitchen towel or paper towels to avoid soggy patties.

Combine the Ingredients:
In a large mixing bowl, combine the grated zucchini, potatoes, onion, and carrots. Add the chopped fresh parsley and beat the eggs in a separate bowl. Add the eggs to the vegetable mixture.

Season and Bind:
Season the mixture with salt and pepper to taste. If the mixture feels too loose, you can add a bit of flour (1-2 tablespoons) to help bind the ingredients together.

Shape the Patties:
Take a spoonful of the mixture and shape it into small patties with your hands. Place them on a plate or tray.

Cook the Patties:
Heat a little oil in a skillet over medium heat. Once the oil is hot, carefully place the patties into the skillet and fry them for about 3-4 minutes on each side, until golden brown and crispy.

Serve:
Once the patties are cooked, remove them from the skillet and drain on paper towels to remove any excess oil. Serve warm.
