Grandma’s Timeless Peach Cobbler: A Warm Slice of Tradition

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, and cornstarch (if using). Toss the peaches to coat them evenly and transfer the mixture to a greased 9×9-inch baking dish.

Make the topping:
In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract to the dry ingredients and stir until just combined. The batter will be thick.

Assemble the cobbler:
Spoon the topping over the peach filling, spreading it out as evenly as possible. It’s okay if some of the peaches peek through; the topping will spread and form a golden crust as it bakes.

Bake the cobbler:
Place the cobbler in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.

Cool and serve:
Allow the cobbler to cool for about 10 minutes before serving. This will help the filling set and make it easier to serve. Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgence.
