Grandma’s Spinach Bake: A Comforting, Flavorful Classic

If using fresh spinach, wash and drain it thoroughly. Heat a large pan over medium heat with a tablespoon of olive oil or butter. Add the spinach in batches, stirring until it wilts down. Once all the spinach is wilted, remove from heat and set aside to cool.
If using frozen spinach, ensure it is fully thawed and squeeze out any excess water.
Cook the Onions and Garlic:

In the same pan, sauté the chopped onions in a little olive oil or butter over medium heat until softened, about 4-5 minutes. Add the minced garlic and cook for another minute, until fragrant.
Mix the Spinach and Cheese Filling:

In a large mixing bowl, combine the cooked spinach, sautéed onions and garlic, Parmesan cheese, mozzarella cheese, ricotta cheese (if using), heavy cream (or milk), eggs, salt, pepper, and nutmeg (if using). Mix everything until well combined.
Bake the Spinach Dish:

Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish (or similar size) with a little olive oil or butter.
Pour the spinach mixture into the prepared dish and spread it out evenly.
Bake:

Bake the spinach bake for 30-35 minutes, or until the top is golden and the center is set. You can check doneness by inserting a toothpick into the center – it should come out clean.
Serve:

Let the dish cool for a few minutes before serving. Slice into squares or spoon into bowls and enjoy this comforting, cheesy spinach bake as a side dish or a main course!
