Grandma’s Skinny Veggie Fritter Dinner


Grate the zucchini, carrot, and potato. Place them in a clean kitchen towel and squeeze out the excess liquid to prevent sogginess.

Mix the Batter:
In a large bowl, combine the grated vegetables, eggs, and salt. Add pepper, herbs, or a bit of flour if the mixture feels too wet.

Cook the Fritters:
Heat a nonstick pan over medium heat. Lightly grease if needed. Scoop small portions of the mixture into the pan and flatten them into patties. Cook for 3–4 minutes per side until golden and firm.

Serve:
Remove from heat and serve warm. Pair with a side salad or a dollop of Greek yogurt for added flavor.
