Wash the zucchini thoroughly. Slice them into rounds or half-moons, depending on your preference.
Wash and chop the tomatoes into small pieces or wedges.
Cooking the Zucchini:
Heat a generous drizzle of olive oil in a skillet over medium heat.
Add the zucchini slices and sauté, stirring occasionally, for about 5-7 minutes until tender and slightly golden.
Add the Tomatoes:
Once the zucchini is cooked through, add the chopped tomatoes to the skillet.
Continue to cook for another 2-3 minutes until the tomatoes begin to soften and release their juices, creating a light sauce with the zucchini.
Serve and Enjoy:
Remove from heat and season with a pinch of salt and pepper, if desired. Serve hot as a side dish or enjoy as a light meal.
