Grandma’s Crispy Potato Patties with Tomato and Cheese Toppings

Boil the Potatoes: Peel and boil the potatoes until soft, about 15-20 minutes. Drain and mash them until smooth.

2. Make the Potato Patty Mixture:
Mix Ingredients: In a large bowl, combine the mashed potatoes with the finely chopped onion, Italian herbs, and black pepper. If the mixture feels too loose, add 2 tablespoons of flour to help bind it together.

3. Shape the Patties:
Form the Patties: Shape the potato mixture into small patties, about 2-3 inches in diameter, pressing them gently to compact.

4. Fry the Patties:
Heat the Oil: Heat a generous amount of vegetable oil in a large skillet over medium-high heat.

Fry the Patties: Carefully place the potato patties into the hot oil. Fry for about 3-4 minutes per side until golden brown and crispy. Remove from the skillet and drain on paper towels.

5. Top and Serve:
Top with Tomato and Cheese: Place a slice of tomato on top of each crispy patty. Sprinkle with shredded cheese (optional) and let it melt slightly from the heat of the patty.

Serve: Serve the crispy potato patties hot as an appetizer or side dish.
