Grandma’s Cabbage Patties with Eggs: A Flavorful, Meat-Free Delight

Prepare the vegetables: Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Add the grated carrot and cabbage: Stir in the grated carrot and shredded cabbage, and cook for another 5-7 minutes until they soften. Season with salt, black pepper, and Italian herbs to taste.

Mix the wet ingredients: In a separate bowl, whisk the eggs and kefir together until smooth.

Prepare the batter: In a large mixing bowl, combine the sautéed vegetables with the egg-kefir mixture. Add the flour and baking soda to form a smooth batter.

Fry the patties: Heat a little oil in a frying pan over medium heat. Drop spoonfuls of the batter into the pan, flattening them slightly with the back of a spoon. Fry the patties for 3-4 minutes per side, until golden brown and crispy.

Drain and serve: Remove the patties from the pan and place them on paper towels to drain excess oil. Serve warm.
