Preheat your oven to 180°C (350°F). Grease and flour a baking pan.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, beat the butter and sugar until creamy and smooth.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the flour mixture, alternating with the milk. Begin and end with the flour mixture, mixing just until combined.
Gently fold in the dried fruits.
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before glazing.
2. Prepare the Glaze:
In a small saucepan, combine the honey and water over medium heat.
Bring to a boil, then simmer for about 5 minutes, until the mixture thickens slightly.
Remove from heat and let the glaze cool slightly.
3. Assemble the Cake:
Once the cake has cooled, pour the honey glaze over the top, allowing it to drip down the sides.
Garnish with additional dried fruits for a beautiful and flavorful finish.
