Ginger Onion Fried Sea Bass

Season the sea bass fillets with salt and pepper. If using a whole sea bass, ensure it’s gutted, scaled, and score the sides lightly for better cooking.

Prepare the Sauce:
In a small bowl, mix together the soy sauce, oyster sauce (if using), rice vinegar (or lemon juice), and sesame oil. Stir well and set aside.

Cook the Ginger and Onions:
Heat vegetable oil in a large skillet or frying pan over medium heat. Add the grated ginger, sliced onions, and minced garlic to the pan. Sauté for about 2-3 minutes until fragrant and the onions are soft.

Fry the Sea Bass:
Push the ginger and onion mixture to the side of the pan. Add a little more oil if necessary and place the sea bass fillets (or whole fish) in the pan. Fry for about 3-4 minutes on each side until the fish is golden brown and cooked through. If cooking whole fish, ensure both sides are evenly cooked.

Add the Sauce:
Once the fish is cooked, pour the prepared sauce over the fish and the ginger-onion mixture. Allow it to simmer for about 1-2 minutes to let the flavors meld together.

Serve:
Transfer the sea bass to serving plates and spoon the ginger-onion sauce over the top. Garnish with chopped cilantro or green onions.
