Garlic Shrimp Stir Fry with Vegetables and Cashews

Season the prawns with salt and black pepper. Set aside.

2️⃣ Cook the Vegetables
In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat.

Add onion, garlic, carrot, broccoli, and red pepper. Stir-fry for about 5 minutes until the vegetables are tender but still have a nice crispness to them.

3️⃣ Cook the Shrimp
Push the vegetables to the side of the skillet and add the remaining 1 tablespoon of olive oil.

Add the shrimp and cook for about 3 minutes per side, or until they turn pink and opaque.

4️⃣ Add the Final Touch
Stir in soy sauce, honey, and freshly grated ginger. Mix well and cook for an additional 2 minutes for the flavors to meld.

5️⃣ Serve and Enjoy
Add the cashews to the skillet, toss everything together, and serve hot!
