Garlic Parmesan Chicken and Potatoes: A One-Pan Comfort Meal

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

Prepare the Potatoes: In a large bowl, toss the potato cubes with 1 tablespoon of olive oil, salt, pepper, and 1 teaspoon of Italian seasoning. Spread the potatoes out on the prepared baking sheet in a single layer.

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, paprika, and onion powder. Drizzle the chicken with the remaining tablespoon of olive oil.

Make the Garlic Parmesan Sauce: In a small bowl, mix together the melted butter, minced garlic, Parmesan cheese, and the remaining 1 teaspoon of Italian seasoning. Stir to combine.

Assemble the Dish: Place the seasoned chicken thighs on the baking sheet with the potatoes. Pour the garlic Parmesan mixture over the chicken thighs, spreading it evenly over the chicken skin.

Bake: Bake in the preheated oven for 35-40 minutes, or until the chicken is fully cooked (internal temperature of 165°F or 74°C) and the potatoes are tender and golden brown. If needed, you can broil the chicken for 2-3 minutes at the end to crisp up the skin.

Serve: Remove from the oven and let rest for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color and freshness.
