Cover the baking dish with aluminum foil and bake for 40 minutes. Remove the foil and bake for an additional 20-25 minutes, until the potatoes are tender and the top is golden and bubbly.

Let the dish rest for 10 minutes before serving. Garnish with freshly chopped parsley for an added touch of color and freshness.
