Preheat oven to 400°F (200°C).
In a small bowl, combine olive oil, minced garlic, thyme, rosemary, smoked paprika, salt, and pepper.
Rub the seasoning mixture all over the chicken breasts.
Place the chicken on a baking sheet and roast for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Let the chicken rest for 5 minutes before slicing.
2. Prepare the Roasted Vegetables:
Toss the baby potatoes, carrots, zucchini, and broccoli with olive oil, garlic powder, Italian seasoning, salt, and pepper in a large bowl.
Spread the seasoned vegetables on a separate baking sheet.
Roast the vegetables for 25-30 minutes, flipping halfway through, until they’re golden and tender.
