Make the Stir-Fry Sauce
In a small bowl, mix together soy sauce, oyster sauce (if using), honey or maple syrup, rice vinegar, and cornstarch (if using) until well combined. Set aside.
Stir-Fry the Chicken
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add the chicken to the skillet and cook for 4-5 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set it aside.
Stir-Fry the Vegetables
In the same skillet, add the remaining oil.
Add the garlic, onion, and bell pepper (if using) and cook for 2-3 minutes, until fragrant and slightly softened.
Add the broccoli and cook for an additional 3-4 minutes, stirring occasionally, until the broccoli is tender but still crisp.
Combine and Finish
Return the chicken to the skillet and pour the stir-fry sauce over the chicken and vegetables. Stir to coat everything evenly.
Cook for another 1-2 minutes, allowing the sauce to thicken slightly and coat the chicken and vegetables.
Serve
Serve the garlic chicken and broccoli stir-fry over cooked rice. Garnish with sesame seeds for added crunch and flavor.
