Start by boiling the cubed potatoes in salted water. Place them in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce the heat and let them cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.
Drain the potatoes and return them to the pot. Mash them with a potato masher or fork until smooth. Add the milk and butter, and continue mashing until the potatoes are creamy. Season with salt and pepper to taste. Set aside.
Cook the Steak Bites:
While the potatoes are boiling, heat the vegetable oil in a large skillet over medium-high heat.
Add the steak bites to the skillet in a single layer. Let them cook undisturbed for 2-3 minutes, allowing them to sear and develop a golden crust. Flip the pieces to sear all sides, cooking for another 4-5 minutes, or until your desired doneness is reached. Remove the steak from the skillet and set it aside.
Make the Garlic Butter Sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic, dried thyme, and rosemary, and sauté for 1-2 minutes until fragrant.
Return the steak bites to the skillet and toss them in the garlic butter mixture. Cook for another 2-3 minutes, allowing the flavors to meld and the steak to absorb the savory butter sauce.
Assemble the Dish:
Serve the garlic butter steak bites over a generous portion of mashed potatoes. Spoon any extra garlic butter sauce over the steak for added flavor.
