Heat the olive oil in a large skillet over medium-high heat.
Season the steak cubes with salt, pepper, and chopped rosemary or thyme.
Once the oil is hot, add the steak bites to the skillet in a single layer. Cook for 3-4 minutes on each side, or until the steak is browned and cooked to your desired level of doneness. Remove the steak bites from the skillet and set aside.
Make the Garlic Butter Sauce:
In the same skillet, melt the butter over medium heat.
Add the minced garlic and cook for 1-2 minutes until fragrant and golden, being careful not to burn the garlic.
Return the steak bites to the skillet and toss to coat in the garlic butter sauce. Let them cook for an additional 1-2 minutes to soak up the flavors. Remove from heat and set aside.
Make the Mashed Potatoes:
While the steak is cooking, bring a large pot of salted water to a boil. Add the chopped potatoes and cook for 12-15 minutes, or until tender when pierced with a fork.
Drain the potatoes and return them to the pot.
In a separate small pan, melt the butter over medium heat and cook the minced garlic for 1-2 minutes until fragrant.
Mash the potatoes with a potato masher or use a hand mixer to combine with the garlic butter, heavy cream (or milk), salt, and pepper until smooth and creamy.
Serve:
Spoon the mashed potatoes onto serving plates, and top with the garlic butter steak bites. Garnish with fresh parsley if desired. Serve immediately and enjoy!
