Garlic Butter Steak Bites and Cheesy Smashed Potatoes – A Perfect Comfort Meal

Boil the potatoes: Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.
Smash the potatoes: Drain the potatoes and place them back in the pot. Gently smash them with a fork or potato masher, leaving some chunks.
Season and mix: Drizzle olive oil, add salt and pepper, and stir in the butter and minced garlic.
Add cheese: Sprinkle the shredded cheddar cheese over the potatoes and mix until melted and combined.
Garnish: Top with freshly chopped chives. Set aside and keep warm.

Cook the steak: Season the steak bites with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the steak in a single layer and cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
Make the garlic butter sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
Combine: Return the steak bites to the skillet and toss to coat in the garlic butter sauce. Cook for another 2-3 minutes, allowing the steak to absorb the flavors.
Garnish: Remove from heat and garnish with freshly chopped parsley.
