Heat olive oil in a large skillet over medium-high heat.
Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until the potatoes are golden and tender. Once done, remove the potatoes from the skillet and set them aside.
Prepare the Steaks:
Season the ribeye steaks (or your preferred cut) with salt, pepper, and dried thyme on both sides.
In the same skillet, add butter and let it melt. Once melted, place the steaks in the skillet and cook for about 4-5 minutes per side for medium-rare, or adjust to your desired level of doneness. Remove the steaks from the skillet and set them aside to rest.
Garlic Butter Sauce:
In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Be careful not to burn the garlic.
Combine the Potatoes and Steak:
Return the cooked potatoes to the skillet, tossing them in the garlic butter sauce. Cook for another 2-3 minutes to allow the potatoes to soak up the flavorful sauce.
Finish the Dish:
Slice the rested steaks into strips or pieces and add them back into the skillet, mixing them with the potatoes and garlic butter.
Garnish with fresh parsley for a pop of color and freshness.
Serve and Enjoy:
Serve immediately while hot and enjoy the rich, savory flavors of this one-pan meal!
