Boil the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
Prepare the Chicken Bites:
Season the chicken cubes with salt, pepper, and garlic powder.
In a large skillet over medium-high heat, melt 2 tablespoons of butter with 1 tablespoon of olive oil.
Add the chicken cubes in a single layer and sauté for 5-7 minutes until golden brown and cooked through.
Add the minced garlic and cook for another minute until fragrant. Drizzle with lemon juice, if using. Remove the chicken bites from the pan and set aside.
Make the Creamy Parmesan Sauce:
In the same skillet, reduce the heat to medium. Melt 2 tablespoons of butter and add the minced garlic. Cook for 1 minute until fragrant.
Pour in the heavy cream, stirring constantly. Bring to a gentle simmer.
Gradually whisk in the grated parmesan cheese until the sauce is smooth and creamy. Add the Italian herbs, if using.
Season with salt and pepper to taste. If the sauce is too thick, stir in some reserved pasta water until desired consistency is reached.
Combine and Serve:
Add the cooked pasta to the creamy sauce and toss to coat evenly.
Top with the garlic butter chicken bites and sprinkle with fresh parsley.
Serve immediately with extra parmesan cheese if desired.
