Fried Potatoes and Onions

Ingredients:
Enough peanut oil to cover the bottom of your pan
2 tablespoons unsalted sweet cream butter
1 lb Idaho Russet or Red potatoes (Red potatoes are recommended for a creamier texture)
Salted water (for boiling potatoes)
½ medium-sized sweet onion (Vidalia is a great choice)
Salt and pepper to taste
Garnish with paprika and fresh basil
