Fried Potatoes and Onions

Wash and peel the potatoes (if preferred). Cut them into thin, uniform slices or small cubes, depending on your preference for texture.
Parboil the Potatoes:

Place the potato slices or cubes in a pot, cover with salted water, and bring to a boil. Let the potatoes cook for about 5-7 minutes until slightly tender but not fully cooked. Drain and set them aside to dry.
Cook the Onions:

While the potatoes are drying, thinly slice the onion.
In a large skillet, heat the peanut oil over medium heat. Add the sweet cream butter and let it melt.
Once the butter has melted, add the onions and sauté them until they become soft and slightly caramelized (about 5 minutes).
Fry the Potatoes:

Add the parboiled potatoes to the pan with the onions. Cook them over medium heat, stirring occasionally, until the potatoes are crispy and golden brown on all sides (about 10-15 minutes).
Season and Serve:

Season the fried potatoes and onions with salt and pepper to taste.
Garnish with paprika and fresh basil before serving.
Tips:
For extra flavor, you can add a little garlic powder or fresh herbs to the potatoes as they fry.
If you prefer, you can substitute the sweet onion with a yellow onion for a slightly different flavor.
