Fried Onions, Onions, and Smoked Glazed Sausage

Wash and cut the fermented potatoes into half cubes. Set aside.
Slice the smoked sausage into rounds.
Dice the red and green peppers and the small onion into cubes.
Fry the Onions and Peppers:

In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium heat.
Add the diced onions and peppers to the pan. Sauté for about 5-7 minutes until softened and slightly caramelized.
Cook the Sausage:

Add the smoked sausage slices to the skillet with the onions and peppers. Continue to cook for an additional 5-7 minutes until the sausage is browned and heated through.
Add the Potatoes and Season:

Add the fermented potato cubes to the skillet. Stir well to combine with the sausage and vegetables.
Sprinkle the seasoned salt, Italian spices, and black pepper to taste. Continue to cook for 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy.
Finish with Parmesan:

Once everything is cooked and well combined, remove from heat.
Garnish with freshly grated Parmesan cheese for a deliciously creamy, savory finish.
