Fried Lemon Pepper Salmon Sticks with Old Bay Blue Cheese

Cut the Salmon: Cut the salmon fillets into even strips (about 1-inch wide).

Season the Flour: In a shallow dish, combine the flour, lemon pepper seasoning, and salt. Stir to combine.

Dip the Salmon: Dip each salmon strip into the beaten eggs, then dredge it in the seasoned flour mixture, making sure to coat each piece evenly.

Fry the Salmon: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once hot, add the salmon sticks to the pan in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

Drain and Rest: Remove the salmon sticks from the pan and place them on a paper towel-lined plate to drain excess oil.

Make the Old Bay Blue Cheese Sauce:
In a small bowl, combine the blue cheese, sour cream, mayonnaise, Old Bay seasoning, and lemon juice. Stir until smooth and well combined.

If desired, garnish with a little chopped parsley for color and extra flavor.
