Fried Egg and Tomato over Rice

Heat 1 tablespoon of oil in a pan over medium heat.
Sauté garlic until fragrant, about 30 seconds.
Add chopped tomatoes and cook until they soften, about 3-4 minutes.
Season with salt, black pepper, and soy sauce. Stir well and let it simmer for another minute.
2. Fry the Eggs
In a separate pan, heat the remaining 1 tablespoon of oil over medium heat.
Fry the eggs to your desired doneness (runny yolk, medium, or fully cooked).
3. Assemble & Serve
Place cooked rice in a serving bowl.
Spoon the sautéed tomatoes over the rice.
Top with the fried eggs and enjoy!
