Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Scoop about 1/4 cup of the potato mixture into the skillet and flatten it with a spatula.
Cook for about 3-4 minutes on each side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels. Repeat with the remaining potato mixture.
Fry the Eggs
In a separate non-stick skillet, melt the butter over medium heat.
Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
For over-easy eggs, carefully flip and cook for an additional 1-2 minutes.
Assemble the Burgers
Spread your favorite condiments on the bottom half of each toasted bun.
Place a steak burger patty on top, followed by a fried egg, lettuce leaves, sliced tomatoes, and sliced red onions.
Cover with the top half of the bun.
Serve
Serve the Fried Egg and Steak Burgers with a side of crispy hash browns.
