Fried Cornbread Southern Cornmeal Hoecakes – A Southern Comfort Classic

In a medium bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix until well combined.
In another bowl, whisk together the egg and buttermilk until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but pourable. If it’s too thick, add a little more buttermilk.
Step 2: Fry the Hoecakes
Heat a large skillet or cast iron pan over medium heat and add vegetable oil.
Once the oil is hot (test by dropping a small spoonful of batter into the oil; it should sizzle), scoop about 2-3 tablespoons of batter into the pan, spreading it out into a small pancake shape.
Fry the hoecake for 2-3 minutes on each side, or until golden brown and crispy.
Remove the hoecakes from the pan and drain on paper towels.
Step 3: Serve and Enjoy
Serve the hoecakes warm with honey, butter, or your favorite savory dish. They are perfect alongside fried chicken, beans, or collard greens.
