Fried Chocolate Donuts

In a heatproof bowl, melt the 200g of finely chopped chocolate with 50ml of water over a double boiler or in the microwave, stirring every 20 seconds until smooth. Set aside to cool slightly.

Make the Donut Dough:
In a separate large bowl, whisk together the egg, melted butter, sugar, and vanilla extract. Gradually add in the flour, baking powder, and salt, mixing until a dough forms. If the dough is too sticky, add a bit more flour.

Shape the Donuts:
On a lightly floured surface, roll out the dough to about 1/2-inch thickness. Use a round cutter to cut out donut shapes, and use a smaller cutter to make the hole in the center. Gather the dough scraps, re-roll, and cut more donuts until all the dough is used.

Heat the Oil:
Heat about 2 inches of vegetable oil in a deep frying pan over medium heat. The oil should reach about 350°F (175°C). You can test the oil by dropping a small piece of dough into it—if it bubbles and rises to the surface, the oil is ready.

Fry the Donuts:
Carefully place the donuts into the hot oil, a few at a time, and fry for 2-3 minutes on each side, until golden brown. Use a slotted spoon to remove them from the oil and transfer to a paper towel-lined plate to drain.

Glaze the Donuts:
Once the donuts have cooled slightly, dip them into the melted chocolate glaze, coating them evenly. Allow any excess glaze to drip off.
