Fried Cabbage with Bacon, Onion, and Garlic

In a large skillet or frying pan, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the pan and set it aside, leaving the bacon drippings in the skillet.
Sauté the Onion and Garlic:

In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.
Add the Cabbage:

Add the chopped cabbage to the skillet. Season with salt, pepper, and smoked paprika (if using). Stir the cabbage to coat it in the bacon drippings and spices.
Cook the Cabbage:

Continue to cook the cabbage, stirring occasionally, for about 10-15 minutes, or until the cabbage is tender and slightly caramelized.
Add the Bacon and Vinegar:

Return the cooked bacon to the skillet and stir to combine. If using, drizzle the apple cider vinegar over the cabbage and toss to incorporate. The vinegar will add a nice tang that balances the richness of the bacon.
Serve:

Serve the fried cabbage hot, garnished with additional bacon bits or a sprinkle of paprika, if desired.
