In a large bowl, combine the flour, sugar, and salt.
Add the cold butter cubes and, using a pastry cutter or your hands, cut the butter into the flour until it resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. If needed, add a bit more water.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Step 2: Make the Fruit Filling
In a saucepan, combine the diced apples or peaches, sugar, lemon juice, cinnamon (or ginger), cornstarch, water, and a pinch of salt.
Cook over medium heat, stirring constantly, until the fruit softens and the mixture thickens (about 5-7 minutes). Remove from heat and let it cool.
Step 3: Roll Out the Dough
After the dough has chilled, roll it out on a floured surface to about 1/8-inch thickness.
Cut the dough into 4-6 inch circles (use a bowl or a cookie cutter).
Step 4: Fill and Fold the Pies
Place a spoonful of the cooled fruit filling in the center of each dough circle.
Fold the dough over to create a half-moon shape, then use a fork to press the edges together to seal.
Step 5: Fry the Pies
Heat about 2 inches of vegetable oil in a deep skillet or pan over medium-high heat.
Once the oil is hot (about 350°F or 175°C), carefully place the pies in the oil, cooking in batches. Fry until golden brown and crispy on both sides, about 2-3 minutes per side.
Remove the pies from the oil and place them on paper towels to drain excess oil.
Step 6: Serve
If desired, dust the fried pies with powdered sugar for an extra touch of sweetness. Serve warm and enjoy!
