French-Style Butterfly Chicken with Rustic Paprika Potatoes

In a bowl, combine olive oil, minced garlic, dried onions, pepper blend, ground peppers, lemon juice, salt, and rosemary.

Marinate the Chicken:
Coat the chicken drumsticks generously with the marinade. Cover and let them marinate in the fridge for at least 1 hour (overnight is even better for deeper flavor).

Prepare the Potatoes:
Toss the potatoes with olive oil, salt, and paprika until well coated. Set aside.

Cook the Chicken and Potatoes:

Option 1 (Oven): Preheat oven to 400°F (200°C). Arrange the marinated chicken and potatoes on a baking sheet lined with parchment paper. Bake for 35-45 minutes, or until the chicken is golden, crispy, and cooked through (internal temperature of 165°F / 74°C) and the potatoes are tender.

Option 2 (Grill): Grill the marinated chicken over medium heat, turning occasionally until fully cooked. Roast the potatoes separately or grill them wrapped in foil.

Serve:
Plate the butterfly chicken with the rustic paprika potatoes. Garnish with extra rosemary or fresh herbs if desired.
