In a skillet, melt the butter over medium heat and sauté the onions for 15-20 minutes, stirring occasionally, until they are caramelized. Add the garlic during the last 2 minutes of cooking. Remove from heat and let the onions cool slightly.
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, dried thyme, salt, and black pepper. Add half of the caramelized onions to the mixture and stir until fully combined.
Shape the Meatloaf:
Shape the meat mixture into a loaf and place it in a greased loaf pan. Pour the beef broth over the top of the meatloaf.
Bake the Meatloaf:
Bake in the preheated oven for 45 minutes.
Add the Topping:
Remove the meatloaf from the oven, top with the remaining caramelized onions and shredded Gruyère or Swiss cheese. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing and serving.
