Fluffy Vanilla Sponge Cake

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a round cake pan (8 or 9 inches) or line it with parchment paper.

Mix Wet Ingredients: In a medium bowl, whisk the eggs and sugar together until the mixture becomes light and fluffy. This will take about 4-5 minutes using a hand mixer or stand mixer. Add the vanilla extract and continue to mix.

Prepare Dry Ingredients: In another bowl, sift together the all-purpose flour, baking powder, and salt.

Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the wet mixture using a spatula or whisk, being careful not to deflate the batter. Add the milk and melted butter, and mix until just combined.

Bake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
