Fluffy Potato Dough Recipe

Place the diced potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

Drain the potatoes and return them to the pot. Mash them thoroughly until smooth. For an extra smooth texture, you can use a potato ricer.

Prepare the Dough:

While the mashed potatoes are still warm, add the softened butter and salt. Mix until the butter is melted and fully incorporated.

Let the mashed potatoes cool slightly before proceeding to the next step.

Form the Dough:

Once the mashed potatoes have cooled slightly but are still warm, start incorporating flour (not included in this basic recipe but can be added if you want to make the dough more manageable) and knead the mixture into a soft dough. You can adjust the texture by adding more butter or flour if needed. The dough should be smooth and easy to handle but not too sticky.

Shape and Cook:

Once your dough is formed, you can use it for a variety of recipes. For potato buns, roll the dough into small balls and flatten them slightly, then bake at 350°F (175°C) until golden. For gnocchi, roll the dough into ropes, cut them into small pieces, and cook them in boiling water until they float.
