Fluffy Keto Cottage Cheese Cloud Bread

Preheat your oven to 300°F (150°C).
Line a baking sheet with parchment paper for easy removal of the cloud breads.
Step 2: Beat the Egg Whites
Separate the egg yolks from the egg whites. Place the egg whites in a clean bowl.
Using an electric mixer, beat the egg whites until stiff peaks form. This should take about 3-4 minutes on high speed. Set aside.
Step 3: Mix the Egg Yolk Mixture
In a separate bowl, combine the egg yolks, cottage cheese, white vinegar, baking powder, salt, whey protein powder, egg white protein powder, and Allulose (if using). Mix until smooth and fully combined.
Step 4: Fold the Egg Whites Into the Yolk Mixture
Gently fold the beaten egg whites into the egg yolk mixture. Use a spatula and fold carefully to maintain the fluffiness of the egg whites. The batter should remain light and airy.
Step 5: Shape the Cloud Bread and Bake
Spoon the mixture into 8-10 mounds on the prepared baking sheet. You can use a spoon or ice cream scoop to create even portions.
Optionally, sprinkle with bagel seasoning for a savory touch, or add vanilla extract for a French Toast flavor.
Bake for 25-30 minutes or until the cloud breads are golden brown and firm to the touch. Keep an eye on them to ensure they don’t over-brown.
Step 6: Cool and Serve
Allow the cloud breads to cool on a wire rack before serving. This helps them firm up and retain their light texture.
