Stir in the oat flour and baking powder until the batter is smooth. It should be slightly thick, but if it’s too thick, add a little water or milk to reach your desired consistency.

Heat a non-stick skillet or griddle over medium-low heat. Add a little coconut oil or butter and allow it to melt, swirling it around to coat the surface.
3. Cook the Pancakes:
Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake. Spread it out slightly to form a round shape.
Cook for 2-3 minutes on the first side, or until small bubbles form on the surface. Flip carefully and cook for another 1-2 minutes on the other side, until golden brown and fully cooked through.
4. Serve:
Once the pancakes are cooked, serve them hot with your choice of toppings. Fresh fruit, syrup, nut butter, or a dollop of yogurt all pair wonderfully with these fluffy pancakes.
