In a large mixing bowl, beat the eggs and sugar together using a hand mixer or whisk until the mixture is pale and fluffy—about 3–4 minutes.
3. Add the Yogurt
Stir in the Greek yogurt until fully combined and smooth.
4. Mix the Dry Ingredients
In a separate bowl, whisk together the flour and baking powder. Gradually add the dry mixture to the wet ingredients, folding gently until no streaks remain. Do not overmix.
5. Bake
Pour the batter into your prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
6. Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or top with fresh fruit if desired.
