Flourless Cottage Cheese Pancakes

Blend the Batter: In a blender or food processor, combine cottage cheese, eggs, oats (if using), baking powder, vanilla extract, and salt. Blend until smooth. If you prefer chunkier pancakes, mix by hand instead.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Cook the Pancakes: Pour small amounts of batter onto the skillet, forming pancakes about 3 inches wide. Cook for 2-3 minutes until bubbles form on the surface. Flip and cook for another 1-2 minutes, until golden brown and cooked through.

Serve: Enjoy warm with your favorite toppings, such as fresh fruit, Greek yogurt, honey, or sugar-free syrup.
