Flavorful Antipasto Tortellini Salad

Cook the tortellini according to the package instructions. Drain, rinse with cold water, and set aside to cool.
Prepare the ingredients by halving the cherry tomatoes, slicing the olives, and chopping the salami or pepperoni.
Make the dressing by whisking together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper in a small bowl.
Assemble the salad by combining the cooked tortellini, tomatoes, olives, salami, and fresh spinach or basil in a large bowl.
Toss with the dressing until well coated. Sprinkle with shredded Parmesan.
Chill for at least 15 minutes before serving to let the flavors meld. Serve cold or at room temperature.
