Flaky Apple Pie Bars

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and line it with parchment paper.
In a large bowl, mix the flour, sugar, and salt. Add the cold butter and cut it into the flour using a pastry cutter or your hands until the mixture resembles coarse crumbs.
Stir in the egg yolk and ice-cold water, mixing just until the dough comes together.
Divide the dough into two portions. Roll out one portion to fit the bottom of the baking dish and press it evenly into the pan.
Step 2: Make the Apple Filling
In a bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, cornstarch, vanilla, and lemon juice.
Spread the apple mixture evenly over the bottom crust.
Step 3: Add the Top Layer
Roll out the second portion of dough and carefully place it over the apples. Trim any excess and press the edges to seal. Poke a few holes in the top crust with a fork to allow steam to escape.
Step 4: Bake & Cool
Bake for 40-45 minutes, or until the crust is golden brown. Let it cool completely before slicing into bars.
Step 5: Add the Glaze (Optional)
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract. Drizzle over the cooled bars before serving.
