Place raisins, apricots, mixed peel, glace cherries, and dates in a microwave-safe bowl. Add apple juice or brandy mixture. Microwave for 1 1/2 minutes until hot. Stir well, cover, and let soak for 1 hour.
Preheat Oven:
Preheat oven to 160°C (320°F). Grease and line a 21–22 cm (8–9 inch) round cake pan.
Make the Batter:
In a large bowl, beat the butter and dark brown sugar until creamy. Add vegetable oil and molasses, mixing until fully combined.
Add Spices & Eggs:
Stir in salt, allspice, cinnamon, nutmeg, and baking powder. Add eggs one at a time, mixing well after each addition.
Fold in Flour & Fruits:
Gently fold in flour. Then, fold in the soaked fruits and chopped walnuts to form a thick batter.
Bake:
Pour batter into the prepared cake pan. Cover with foil and bake for 2 1/2 hours. Remove the foil and bake for an additional 30–45 minutes or until a skewer inserted into the center comes out clean.
Cool & Decorate:
Allow the cake to cool completely in the pan before removing.
Optionally, decorate with a layer of marzipan, followed by white fondant, and finish with cherries on top for a festive look.
